what if you want to create a new channel (perhaps on a specific website or webpage) that only sells a sub-set of your inventory?

You can do that by passing in a parameter to your online booking wizard: (with one or more categories)

Please note, that the category name(s) you pass in, in your URL, needs to exactly match the category name in your store (case sensitive and %20 for any spaces)
